Extending the shelf-life of products with ozone

Extending the shelf-life of products using ozone is a technique that is increasingly used. Fruit and vegetables are mostly stored (and cooled) for a longer amount of time. Ozone can help to extend the shelf-life of fruit and vegetables, which means the produce will stay fresh for longer.
There are two methods to extend the shelf life. The first consists of ozonising the product before it is stored. The second consists of dosing ozone in the storage spaces.

The first method is used more often for products that are packaged and distributed shortly after. This method is explained further on the following page: Wassen / desinfecteren van groente en fruit .
The second method is mostly used for products that are stored for a longer amount of time like apples and pears for example.
The influence of ozone has two big advantages, the first is that ozone kills bacteria and fungo. The second is that ozone oxidised ethylene. A lot of fruit and vegetables excrete ethylene that speeds up the ripening process. Because ozone oxidises the ethylene, the ripening process slows down and the product stays fresh for longer.

Using ozone isn’t just useful to store fruit and vegetables, but also for eggs, cheese and potatoes. The extension of the shelf life varies between a couple days to multiple months.
